- PARSNIP AND PARMESAN BRUSCHETTA
This is an Italian snack dating back to the 15th century. It basically consists of toasted bread rubbed with garlic and topped with extra-virgin olive oil, salt and pepper. It is super easy to prepare and above all so delicious.
– 1 garlic clove
– A handful of rocket leaves
– 3 large parsnips cored and cut into 1 cm cubed.
– 2 tbsp olive oil
– 1 mini Ciabatta or Panini roll, cut into 12 smaller slice
– 50 grams butter
– 50 grams parmesan cheese
Toast the bread in a heated pan for about 2 minutes until it starts to turn golden brown. Take each piece and rub a clove of garlic over each. Heat a good amount of butter in a pan and fry the Parsnips in medium heat for about 20 minutes until they become soft. Remove them from the pan and mash them to a purée in a mixer. Mix them thoroughly and serve at room temperature.
Now spread the Parsnip on the toast and garnish with a few vegetable leaves and Parmesan. This easy meal suits well a quick lunch or evening meal.
- TOFU BARBEQUE SKEWERS
A cool and calm evening calls for a nice tofu barbecue meal. This recipes is sumptuous once added a little sauce to sweeten it. For a healthy and fresh meal, tofu barbecue is the best and requires less time and energy to prepare.
– 1 pack of Tofu
– Some garlic
– Olive oil
– Barbeque skewers
– 1 punnet of button mushrooms
– 2 pieces of pepper both red and yellow
Many customers find it hard choosing the best and real tofu. Large stores usually have the real one and each pack can feed two people.
Saute the mushrooms in a light olive heated pan until soft and ready to be served and add a few spices to the mushrooms. Take the Tofu and chop it all. Stick it into the skewer. Crush the garlic into olive oil and drizzle and coat the skewers around the pan. Salt and pepper the Tofu to taste and serve together with the mushrooms.
- MUSHROOM PIZZA
Mushroom pizza is a sweet recipe edible more often by many families. It requires ample time to prepare and the outcome is always a delicious one. It is usually edible during dinner meals by many vegetarians as it has a good amount of nutrients and vitamins.
– Few pizza bases
– 1 cup sliced Mushrooms either shiitake, button or any other variety
– 1 piece red onion
– 1/4 tsp Garlic minced
– 1/4 cup Black olives pitted
– 11/2 cup Mozzarella cheese
– 2 tbsp Olive oil
– 1 cup Tomatoes roasted diced drained
– A tablespoon of Salt
Saute the mushrooms in an olive heated pan until they are soft. Add garlic and onion pieces and stir gently until mixed evenly. Spread sliced tomatoes over the base of the pizza or crust and top with the rest. Bake the contents in a pre heated oven until the cheese starts to burn down. Bake for a few minutes roughly 25 minutes. Serve with the mushroom and season to taste using the salt and other spices.
- SPINACH POTATO FLORENTINE
This vegetable recipe is highly nutritious in vitamins and offers a good amount of carbohydrates to the body. Wine Vinegar completes the sweetness of the recipe and gives it a delicious taste.
– 3 tbsp of Olive oil and ¼ tablespoon of pepper
– /4 cup Wine vinegar
– 1 cup – Baby spinach leaves
– Few Radish roundels
– 4 pieces of baby potatoes chopped
– 1 piece red onion roundels sliced
– 4 tablespoons Parmesan cheese
– 2 tablespoons of Parsley chopped
– 1 tablespoon of Almonds sliced toasted
– Salt for seasoning
Mix cheese, vinegar, parsley, oil salt and pepper together and whisky gently. Put 1/3 of the content in a refrigerator. Steam the chopped potatoes and mix them with the onions and radish. Pour a cup of water and a few seasoning ingredients over the potatoes and gently mix them. Marinate for about 15 minutes in refrigerator while blending once during marinating. Form alternate layers by laying the spinach down and placing the marination mix over it. Garnish with toasted almonds and drizzle the remaining dressing over and along the sides of the salad. Serve the salad with a desired drink and escort.
